Well, they could release a "HDMI" cable that has a analog to digital HDMI converter chip in the connector, but that would be just silly and consumer misleading as it would put one completely unnecessary conversion stage and be worse than the original analog signal
There was an interview posted in these very forums that had a MS rep (I think Allard) say that HDMI will be there (the question by the interviewer was directly asking about HDMI).

Exactly, not to mention even the "maybe firmware can make 360 output digital through the multi port" theory is specious because as far as I know HDMI requires two way communication which is something the multi out is certainly incapable of.

You can get 1080p HD with component (at least you're secure until 2010, after which it is currently unknown)
Component signal is perfectly acceptable qualitywise even on big >100" screens.
Sometimes you might even get overall better picture with component, there are many devices that simply output worse picture with HDMI. It's worth trying if you have both in your DVD player for example.
General rule though is that HDMI should give you that little bit better picture, but you really don't get so much better pic over component that it should be a dealbreaker if image quality is your main concern.
HDMI does keep you better future proofed.
HDMI is more convenient. 1 cable vs. 4 cables. Musb easier to install and draw long lengths.
So, conveniency and future proof, in that order. Image quality depends on your device... although if you don't have a device that outputs HDMI in the first place how can you tell
Certainly easier to install, but even TV's that HAVE HDMI right now aren't "set" for this, as they likely have just the one. And if you have only one HDMI, what are you planning on doing...? NOT hooking up your HD cable box to it? Other devices don't seem to be set for passthroughs yet, which is what I was hoping the PS3 would do with them over "dual output." Would make all sorts of other abilities (like PVR, PiP, etc.) easier for them too, eh?
