One thing I have noticed about various impressions you read on the Internet about XBOX 360 & PS3 games: it really matters what type equipment you use to watch & listen to HD games.
Small screen sizes, poorly calibrated colors/contrast/black levels, poor quality scalers in the TV, etc. can all conspire to make your first impression of a game less than stellar. For example, I own both a 26" 720p TV set and a 46" 1080p TV set. If I play Gears of War on the 26" set and listen to the sound in stereo through the built-in speakers, GoW feels like a good, but not great game. When I play GoW on the 46" 1080p set with 5.1 surround sound, it is a whole different experience and lives up the high ratings it has received in reviews.
Similarly, Motorstorm on the demo kiosk looks no where near as good as it does on my PS3/46" 1080p/5.1 sound setup. Part of that is the demo kiosk uses an older build; the other is that the TV's in the kiosks aren't usually properly calibrated. Colors and lighting are two things mostly commonly off.
