Here's the thing though. Both Sony and MS are likely to focus on gaming at 4k for next gen. At most Nintendo only needs to focus on gaming at 2k (1080p). 2k at TV viewing distances is close enough to 4k at TV viewing distances that most consumers won't really notice except in side by side comparisons or if they get fairly close to their TV.
Right now they are trying to compete at 720p, 900p, 1080p when docked which is awfully close to the current gen home consoles, and that's what makes the graphical IQ differences when docked so stark.
Combined with being both a console and a portable it's still going to see a massive uptake.
Focusing on 1080p docked and 720p or 900p portable should more than allow them some breathing room when porting from 4k next gen consoles.
There will still be compromises required WRT to graphical IQ features (you wouldn't need 4k assets for 1080p obviously) that would help with that as well.
If they focus on the message that the Switch is a portable device that can also be hooked up to a TV like a home console (IE - focus on the portable message with the convenience of using it as a home console when at home) then they would never need to ever support higher than 1080p resolution, even if Sony and MS start to chase 8k (completely unneeded except for VR). That would make life much easier for Nintendo.
