E3 as a show is often 'smoke and mirrors' where loosely hung-together demos are put in front of the masses without proper testing, and short-cuts and deceptions are used to try and present what the final game will look like. There are plenty of rational explanations that don't require belief either in MS being utterly evil and deceiving us all, not that XB1 has secret extra power that MS randomly refuse to tell anyone about.
