I don't know about GTA Online specifically, but there is plenty of money to be make selling hacks/mods/ingame currency. I can easily see professional criminals wanting to see if they can leverage the source code in some way.

This also happened to EA not that long ago, who didn't negotiate with the hackers who were trying to extort money, and let them release everything which I think included the source code for the latest FrostByte engine as well.

That's got to have been the most impressive game-related leak since Half Life 2, with the Nintendo Giga-Leak being a close second for the sheer volume but much less damaging for consisting only of old material.
