Next season (2004) is the European Championships in Portugal. This starts on 12th June and the Final is on 4th July - 31 games will be played throughout the country in this period. All European Countries are currently in the qualifying stages to see who reaches the finals next year.

You'll need to try and book tickets soon if you decide to go to this tournament. I'd recommend it highly - I went to Euro2000 in Belgium and Holland and had a cracking time.
Early in May is when the domestic football season usually finishes. The F.A. Cup Final is usually in the first week of May and the European Cup Final tends to be played shortly after this. I think the season probably finishes around the end of April in continental countries, however.
Are you limiting yourself to any part of the continent? And how long do you plan to stay there?
There was a site that showed all the major events in europe based on time of year. Ill try to search for it and post the result. I think travelocity and expedia have something similar but not for sports.
