This may not be that important in games, but it seems in first person shooters, the Metal Gear Solid series has the most animal life (or lifeforms). Note that the lifeforms in this case are not inclusive of the protagonist or antagonist (for example creatures you shoot to gain score or pass the mission, and don't attack you). Lifeforms here are those animation extras put into the game to provide more realism, to make the game feel more alive.

If you compare recent first person shooters, KZ2 only has one bug that eats corpses. MW2 has none I think (the dog attacks you, so is part of the mission). I don't think UC2 has any either (I haven't played it). Cut-scenes don't count.
