If you actually want to spend the full amount then I would probably go with a pair of GT's in SLI. Or perhaps wait for this new GTS and get a pair of them (each one being at least as powerful as an Ultra).
I thought about that option at first (new GTS 512 SLI) but then I realized that the 256-bit MC meant only 4 ROP partitions are possible so its unlikely to exceed the Ultra except perhaps at low res.
I hadn't realised it had fewer ROPS. Bummer!

When I mentioned Dual-monitor, I was speaking from the desktop perspective. From the looks of things, when you have crossfire/sli, you can not run dual monitors even for just the desktop.

With 2500.00 to burn I'd consider running a TripleHead2Go with 3x 20" 1280x1024 displays(or 19"s) for a nice suround setup.
Easily within your budget.
