Here are the fields, what do they mean?

Pay....
The sum of....
.....or bearer

Then after the company name it shows 2 blank lines with a space between them.

Where do I stick the person's address?

Address? You don't put in an address. (except maybe YOUR address on the back).

All you have is
  1. Payee
  2. Amount (in writing)
  3. Amount in digits
  4. your sig (and I DONT mean "Agent of love and" :p)
  5. date

Also, in Aus', you should put two vertical lines across the cheque with "not negotiable" in between. It makes it more secure.

Payee: zsouthboy
amount: one hundred beelion dollars, and no 00/00 cents

Kidding aside, other than what they've already told you, put "For Deposit Only" on the back of the check. If it gets stolen from the mail/whatever, it can't be cashed without being deposited into a bank account (and usually criminals aren't that stupid.. but.)

That is what "not negotiable" means in Australia and it's written on the front of the cheque. (FWIW it's something like "account payee only" in the UK)
