I just feel that there are something extraordinary in the games mentioned that differentiates them from the rest. GT3 has graphics yet to be matched by any other games during its time(maybe even now), it also has or mimic physics that is very realistic, excellent gameplay making very good use of the analog controllers. MGS2 also has excellent graphics during its time, it's realistic (as far as i'm concerned, snake is the only character who climbs stairs most realistically compared to any other game characters i know it sounds ridiculous, but it shows that the developer pays attention to minor details), dialogues are top-notched. Basically, they are games which tries to exploit and utilise the hardware to the fullest and offers that "oscar" touch.

In that case, I would put Jak & Daxter up in that AAA league. Never before have I played the game that felt so much like an interactive disney cartoon, yet gave so much of freedom and control over the characters movement before. Controling Jack over the screen just felt so.... GOOOD! Technically the game is very impressive, boosting no loading screens and an incredible draw distance throughout the game. The game is short, but one of the games I can just go back to, just to get the enjoyment over walking Jack through the beautiful landscapes and discovering the world.
Another game that would deserve that AAA title IMO is Final Fantasy X. The detail of the world, sphira, and all the characters are immense. Perhaps one could argue that it lacks the detail of animation in its gameplay, but that's not really the point in a game like this. The size and scope of the game alone should be enough to raise ones eyebrow in amazement of all the work the developers must have put into. The little details are there too - you'd be hard put not to notice them, especially once you've seen the FMV's.
Never have played ICO myself, but I'm pretty sure many would concider it a AAA titile. I did see a few videos and must say that the work is very impressive. I will definately check this out though - I'd be a fool not to, I suppose.
And yes, I would consider Metal Gear Solid 2 and Gran Turismo 3 of being AAA for the very same reasons. I am also overly confident that their respective sequels will be not any less amazing.

For some people, a AAA game should drive hardware sales, or at least sell millions of copies, for others it should be a game that get high reviews from every site.
In the first case, ICO does not qualify. it is the kind of game everybody talks but nobody bought for real. So, when you talk about AAA, just define what category you refer.
For me, I vote the ICO/ZELDA/MP category (based on reviews) rather than the GTA/ETM/EA games

BTW; I have only played Final Fantasy VII and X (and fell instantly in love with them). I'll be buying VIII and IX if I get a chance to import them from England (they're all in german overhere ). Next to Jak II, my most anticipated game for this year (or next) is undoubtadly Final Fantasy X-2.
EDIT: checked the shops, it's not platinum.
