I'm a little pissed the first movie STILL doesn't include that lost scene with Biggs cut into it, but I guess Lucas simply wants to introduce Luke when the Jawas arrive at their little bungalow out in the desert. 
It does work really well that way tho, it's the classic way we're used to seeing him, so I guess I shouldn't bitch too much. The way he appears and the music instantly tells us he's the hero... *cough*Han Solo*ahem*
