That's because it's not the ultra version ( it has normal cooling )
The MSI ultra has the BlowFX(tm)

It is the 5800 regular, but it does NOT have normal cooling. It has a cooling method akin to the Gainward solution.

AFAIK, all NV30 reference designs take 2 slots. The non-ultra just doesn't have the leaf-blower.

Joe, are you referring to the MSI non-ultra image in the posted url? Or the Ultra pic in the forum?
I just did not know that the non-ultra was suppose to take 2 slots...

MSI non-ultra image. That particular board looks like it has an fx-flow type of cooler set-up, but doesn't look as powerful, so it's likely quieter.
Every vendor spec sheet for 5800 non-ultra products mentions one "requirement" is to have a free PCI slot. (And also, the 400 Mhz Quadro FX is a 2 slot solution as well.)

Again, just to be clear, with 5800 non-ultras I'm aware of have two-slot cooling solutions. But they do NOT have the FXFlow cooler. So I imagine that noise shouldn't be any more of a problem (or only slightly more) than the typical heatsink-fan...just takes up more space.
